Beyond Amazeballs

INGREDIENTS

  • 1lb beyond meat, thawed if frozen
  • 1/2 onion, finely diced
  • 1/2 tbsp garlic, minced
  • 1/3 cup fresh Italian parsley, finely chopped
  • 1/3 cup panko bread crumbs
  • 1/2 cup vegan Parmesan
  • 1 tsp garlic granules
  • 1/2 tsp onion granules
  • 1 tsp oregano, dried
  • 1/4 tsp white pepper

INSTRUCTIONS

  1. Preheat oven to 375° F
  2. Dice onion, mince garlic, and chop parsley.
  3. Heat a small amount of oil in a pan. Add garlic and onion to pan. Sautee until onion becomes translucent. Set aside once cooked to cool.
  4. In a small bowl combine bread crumbs, garlic granules, onion granules, dried oregano, and white pepper.
  5. In a large bowl add thawed beyond meat, sauteed onion and garlic, parsley, spice mixture, and vegan cheese.
  6. Use a spoon, spatula, or your hand to combine mixture together well.
  7. Once mixed, create your amazeballs with the mixture. I divided the mixture into about 16 amazeballs of roughly the same size.
  8. Place amazeballs on a parchment paper lined baking sheet.
  9. Bake at 375° F for 20-25 minutes.
  10. Enjoy!
