Quick & Simple Summer Pasta Salad

  • 1 package of pasta of choice
  • ¾ to 1 whole English cucumber, peeled & cut into quarters
  • ¼ orange bell pepper, diced
  • ¼ red bell pepper, diced
  • ¼ yellow bell pepper, diced
  • 1 carrot, grated
  • 1/3 block of vegan feta, crumbled
  • 1.5 tbsp Trader Joe’s green goddess seasoning
  • ¼ avocado oil
  1. In a large pot, bring salted water to a boil. Once water is boiling, add pasta and cook according to directions on the package.
  2. While pasta is cooking, prepare all of the veggies and vegan feta.
  3. Once pasta is done cooking, drain and rinse with cold water to cool the pasta.
  4. Place pasta and vegetables in a large bowl. Drizzle the oil and seasoning on top. Mix to combine everything evenly, then add the feta and mix one more time.
  5. Enjoy!
