
- 1 package of pasta of choice
- ¾ to 1 whole English cucumber, peeled & cut into quarters
- ¼ orange bell pepper, diced
- ¼ red bell pepper, diced
- ¼ yellow bell pepper, diced
- 1 carrot, grated
- 1/3 block of vegan feta, crumbled
- 1.5 tbsp Trader Joe’s green goddess seasoning
- ¼ avocado oil
- In a large pot, bring salted water to a boil. Once water is boiling, add pasta and cook according to directions on the package.
- While pasta is cooking, prepare all of the veggies and vegan feta.
- Once pasta is done cooking, drain and rinse with cold water to cool the pasta.
- Place pasta and vegetables in a large bowl. Drizzle the oil and seasoning on top. Mix to combine everything evenly, then add the feta and mix one more time.
