Mac N Cheezy

I LOVE a good vegan mac n cheeze and I wanted to make something different from the super easy vegan mac n cheeze that I normally make. This is what I came up with! It is creamy, gooey, and absolutely delicious. I hope you all enjoy this one! xX

Just a quick little tip since this has a lot of different vegan cheeses, check your local grocery outlet! I was pleasantly surprised by just how many vegan products they have, including vegan cheeses!

INGREDIENTS

  • 1 lb pasta of choice, cooked per directions
  • 2 cups full fat oatly
  • 2 tbsp vegan butter
  • 1 bag of vegan cheddar, I used violife
  • ½ c field roast chao shreds
  • ¼ c vegan parm shreds, I used Trader Joe’s
  • ¼ c nutritional yeast
  • ¼ tsp white pepper
  • ½ tsp onion powder
  • 1 tsp garlic powder

INSTRUCTIONS

  1. Bring a large pot of salted water to a boil. Once boiling, add pasta and cook per directions on package.
  2. Once pasta is done cooking, strain and set aside.
  3. In the same pot, melt the vegan butter on medium-high heat then add the rest of the ingredients, whisking the ingredients together.
  4. Bring sauce to a boil, whisking occasionally to combine cheese into sauce as it melts. When the cheese has fully melted, the sauce will change in color. This is usually how I tell that the sauce is done!
  5. Once sauce is done, transfer pasta back into the pot and mix cheese into it well.
  6. Transfer to a baking dish, top with extra cheeses. Bake for 10-15 minutes then enjoy!
